The helmet is the same. It's the robes that change between the versions.

I'd find your fabirc before you get to the painting stage. It's A LOT easier to match the paint to the fabric than the fabric to the paint.... believe me

I can imagine that. I work wire carpaint soo i know the problems

You'll also want to make sure the paint is somewhat flexible so that it can stretch as the helmet expands or shrinks as you wear it

Are the Rubies helmet a good one?

From all I have heard, the rubies are just the latest version of the Don Post helmet... slightly larger, but the same idea. They are 501st approvable after being worked on....
